INGREDIENTS:

125g Butter, softened

½ cup Natvia

1 teaspoon Vanilla Essence

1 cup Plain All Purpose Flour

1 tablespoon  Cornflour

¼ cup Nuttvia

METHOD:

Preheat oven to 160C fan forced

Beat the butter, Natvia and vanilla essence together until smooth.

Sift in the flour and cornflour and stir to combine with a wooden spoon or spatula.

Gently turn out the dough and knead until it comes together, if the dough is a little crumbly, wet your hands with cold water.

Cut into small rounds and press down in the middle to create a depression with your thumb, cover and chill in the fridge for 20 minutes.

Bake for 15-20 minutes until the edges start to become golden.

Let cool on the tray for about 1 minute before carefully placing on a wire rack to cool. They will harden as they cool.

Using a piping bag, pipe on Nuttvia into a peak in the middle where your thumb-print is.
